The Small American Brewery: Opportunity & Challenge in Approaches to Sustainability

Investment decisions for any startup brewery are hard, sometimes requiring postponement of desired investments until a later time, after sales/volume benchmarks are met. Focusing on possible energy decisions for the small artisanal brewery with a defined budget, an exploration of the choices supporting sustainability available to a new brewery are presented across the enterprise in a framework familiar to chemical engineers. Calculations using simple ROI are superseded by IRR for a more “robust” analysis and Life-Cycle Analyses are presented for decisions made for a new-build brewery in northeastern Pennsylvania. Future investments in support of the business outside of energy conservation or other sustainability initiatives must be planned for; examples of integrating such planned cashflow budgeting is shown using our trusted toolkit of ordinary differential equations.

About the Speaker
Jaime Jurado is the Operations Partner and Master Brewer at the new, $8.5M Susquehana Brewery. Previously, he served as Director of Brewing Operations for The Gambrinus Company for 15 years. In addition to earning degrees in chemical and electrical engineering, he has studied at and managed brewing operations all over the world, including the Bavarian breweries of Partrizier-Brau AG; Truman, Hanbury & Buxton in England; E. Smithwick & Sons Brewery in Ireland; and many others in Africa, Australia, and India.
